According to the Celiac Disease Foundation (CDF), Celiac affects 1 out of 133 people in America. According to the CDF, Celiac is a lifelong autoimmune intestinal disorder, found in individuals who are genetically susceptible. Damage to the mucosal surface of the small intestine is caused by an immunologically toxic reaction to the ingestion of gluten and interferes with the absorption of nutrients.
